This session is about decoding citrus fruit. The acid and sugar compositions of the four major citrus fruits are why we use them all differently, but we rarely stop to think about exactly what we’re doing. How can we balance a cocktail before we’ve made it, and can we extend the life of our painstakingly fresh squeezed juices?
